My question to you is, what do you recommend for keeping these things running for as long as possible? Would you recommend a ford diesel truck with the 6.7 liter engine?

But you're in sort of a pickle here because the Cummins 6.7 liter straight-6 diesel is an even better engine, and Cummins themselves make some of the best diesel engines in the world. So the choice is your's if you want the Cummins or the Ford.
